ANKE builds the Blast Freezer in two capacities on the same platform. BCF5 takes five GN 1/1 trays and handles 20 kg of cooked food per cycle in a 1010mm high cabinet. BCF10 takes ten trays and handles 40 kg per cycle in a 1785mm cabinet. Both operate across the full +3C to -40C range.
Both models are 800mm wide and 840mm deep, so they occupy the same floor footprint.

What Happens When Cooked Food Is Frozen Slowly

A blast freezer is not a colder storage freezer. A storage freezer holds food that is already frozen. A blast freezer takes food that is hot and drives the heat out of it fast, and the speed of that pull down decides both whether the food is safe and whether it is still worth eating once it thaws.

Large ice crystals

This is the one that shows up on the plate. Slow freezing grows big ice crystals that rupture the structure of the food, so moisture and texture are lost the moment it is thawed.

Time in the danger zone

Bacteria multiply fastest in the middle temperature band. A deep tray of cooked rice or sauce left to cool on a bench sits in that band for hours before it ever reaches a freezer.

Hot food in a storage freezer

Loading a hot tray into an ordinary freezer raises the temperature of the whole cabinet, so every other item stored in it is put at risk at the same time.

Nothing to show an inspector

A controlled cycle on a dedicated machine gives a repeatable, documented process. Cooling on a bench and then moving it gives you nothing to point at.

Why A Blast Freezer Needs Four Times The Refrigeration Power Of A Storage Freezer

Compare two numbers from the ANKE range. An under counter freezer runs 550 watts of refrigeration. The BCF10 blast freezer runs 2400 watts. Both end up around the same cold temperature, so why the gap? Because a storage freezer only has to hold cold that is already inside it, while a blast freezer has to remove heat from food that arrives hot, and remove it quickly. Blast duty is measured in heat removed per hour, not in temperature reached. That is also why this is the one unit in the ANKE refrigeration range that runs R404A rather than R290.

Blast duty means running at a -35C evaporating temperature under heavy continuous load, which is why R404A is specified here while the rest of the ANKE range uses R290.

Anti-condensation door frame heaters

Stop the door frame icing shut between cycles, which matters on a machine that is opened warm and closed cold several times a day.

GN 1/1 anti-tilt slides

Trays run on integrated slides rather than sitting on loose shelves, so a full hot tray cannot tip as it goes in or comes out.

Automatic condensate vaporizer

Evaporates defrost water using waste heat from the system, so no floor drain is needed under the cabinet.

What is a blast freezer?
It is a machine built to remove heat from cooked food quickly, rather than to store food that is already frozen. The ANKE unit operates from +3C down to -40C and handles 20 kg or 40 kg of cooked food per cycle.
A normal freezer holds food that is already frozen. A blast freezer takes food that is hot and drives the heat out of it fast. The ANKE BCF10 runs 2400 watts of refrigeration to do that, against 550 watts for a storage freezer of a similar footprint.
Two reasons. Bacteria multiply fastest in the middle temperature band, so the longer food sits there the greater the risk. And fast freezing forms much smaller ice crystals than slow freezing, so the structure of the food survives and it is still worth eating after thawing.
That is the range the cabinet can be set to. A blast freeze cycle runs at the cold end of it, so the air around the food is driven well below the target core temperature and the heat comes out as fast as possible.
BCF5 takes 5 trays and handles 20 kg per cycle in a 1010mm high cabinet with 90 litres of usable volume. BCF10 takes 10 trays and handles 40 kg per cycle in a 1785mm cabinet with 290 litres. Both are 800mm wide and 840mm deep, so they take the same floor space.
What temperature range does the ANKE Blast Freezer cover?
It covers +3C to -40C, with a -35C evaporating temperature.
It uses R404A, with a GWP of 1900. R404A is specified here because blast duty means running at a -35C evaporating temperature under heavy continuous load. The rest of the ANKE refrigeration range uses R290, which has a GWP of 3.
BCF5 handles 20 kg per cycle across 5 trays. BCF10 handles 40 kg per cycle across 10 trays. Tray size is 400 x 600 mm, GN 1/1.
The Blast Freezer is rated for 32C ambient. That is lower than the 43C rating on the ANKE under counter range, so it should be sited in an air-conditioned area of the kitchen rather than in an unconditioned back-of-house space.
BCF5 has a total electrical load of 0.28 kW and draws 3.9 running amps. BCF10 has a total electrical load of 1.2 kW and draws 5.6 running amps. Both run on 220V, 50Hz, single phase.
How often should the condenser be cleaned?
A commercial kitchen builds grease and dust quickly, so the condenser should be checked and cleaned every 1 to 3 months. On a blast freezer this matters more than on a storage unit, because the system is doing far more work per cycle.
A blast freezer is opened warm and closed cold several times a day, which is exactly the condition that makes a door frame ice up and stick. The anti-condensation door frame heaters keep the frame clear so the door keeps sealing properly.
The unit includes an automatic condensate vaporizer system, which evaporates the water using waste heat from the refrigeration system instead of draining it away, so no floor drain is needed underneath.
Noise output is 78 dBA on BCF5 and 83 dBA on BCF10, against 62 dBA on an under counter chiller. A blast freezer moves far more air and runs far more refrigeration power, which is what the extra noise reflects. It is worth siting away from a service pass or dining area.
Which model should I choose?
Work from your largest single batch rather than your daily total. If the biggest quantity that needs to come down at once is under 20 kg, BCF5 is enough. Above that, BCF10. Both take the same floor footprint, so the decision is about capacity rather than space.
