ANKE builds the Preparation Chiller in two lengths on the same platform. PP-2 is 1500mm wide with two doors and 248 litres of cabinet volume. PP-3 is 2025mm wide with three doors and 371.2 litres. Both are 700mm deep, with the worktop at 850mm and the top of the pan rail at 1070mm.
Any door position can be swapped for a bank of 4 or 6 drawers.

What Happens When Prep Sits Out On The Line

An assembly station lives or dies on two things: how cold the toppings stay, and how far the hands have to travel. A preparation chiller exists to solve both at once, which is why it is built differently from an ordinary counter fridge.

Toppings above safe temperature

Why The Spec Sheet Lists Two Heights, 850mm And 1070mm

Look at the exterior dimension and you will see it written as 850 / 1070. That is not a typo or a range. The 850mm is the worktop, at standard counter height so it lines up with the rest of the kitchen. The 1070mm is the top of the elevated pan rail, which sits roughly where a standing person’s hands naturally rest. Building a pizza or a sandwich therefore needs no bending, while the bulk cabinet stays underneath at counter height. One machine, two working heights, doing two different jobs at once.

What is a preparation chiller?
It is a refrigerated assembly station. A row of GN 1/3 pans sits on an elevated rail at the front for prepped ingredients, and a refrigerated cabinet sits underneath for bulk stock. A flip up cover closes the pan line between service.
It holds prepped toppings within arm’s reach during service, so a pizza or sandwich can be assembled without leaving the station. The elevated pan rail is what separates it from an ordinary counter fridge.
An under counter chiller is refrigerated storage with a flat worktop on top. A preparation chiller adds an elevated GN 1/3 pan rail at 1070mm plus a flip up cover, so it is a working assembly station rather than storage with a bench above it.

The Preparation Chiller is rated for 32C ambient. That is lower than the 43C rating on the ANKE under counter range, so it should be sited in an air-conditioned area rather than an unconditioned space.
It runs on R290, a hydrocarbon refrigerant with a Global Warming Potential of 3.
Why does the flip up cover matter?
Closing the pan line between service holds the temperature in the pans and keeps them covered against anything in the air above the station. It also stops the surface of prepped ingredients drying out.
A prep station sits in the middle of a working kitchen, so grease and dust build up quickly. Check and clean the condenser every 1 to 3 months.
Check that the flip up cover is being closed between service, then check the condenser for grease and dust, then check that pans are not being overfilled above the rail line. Overfilled pans sit above the cold air and warm from the top.
The unit includes a waste heat recovery condensate vaporizer system, which evaporates the condensate using waste heat rather than draining it away.
Which model should I choose?
Measure the length available on your line first. PP-2 needs 1500mm, PP-3 needs 2025mm. If both fit, choose on cabinet volume: 248 litres against 371.2 litres.
