ANKE builds the Under Counter Freezer in three widths on the same 700 Series platform: 900mm, 1350mm, or 1800mm. All three are 700mm deep and 850mm high, and all three hold -18C to -22C with a -35C evaporating temperature.
Doors and drawers are interchangeable on every width, so any door position can be swapped for a bank of 2 or 3 drawers.

What Happens When A Freezer Sits On The Hot Line

An under counter freezer rarely gets an easy spot. It goes where the chef needs it, which is usually in the middle of the cook line, between equipment that is throwing off heat all service. That is the hardest place in the kitchen to hold -18C, and it is where most under counter freezers quietly start to fail.

Radiant heat from neighbours

A fryer or griddle beside the unit raises the local air temperature well past the room temperature, and the compressor never gets a break.

Trapped exhaust air

A rear breathing freezer built into a counter run re-breathes its own hot exhaust, so the condenser is fed warm air instead of room air.

Grease-clogged condensers

Why A Freezer Needs Front Breathing More Than A Chiller Does

Here is a number worth knowing before you specify: an ANKE under counter freezer rejects 975 watts of heat, while the same size chiller rejects 613 watts. That is roughly 60 percent more waste heat coming out of an identical looking cabinet, because dropping to -18C takes far more work than holding +4C. All of that heat has to leave the enclosure. If it cannot, the unit slowly cooks itself.

Front breathing and venting

Air enters and exits at the front grill, so the freezer pushes its 975 watts of heat out into the aisle instead of into the counter cavity behind it.

Slide-forward condensing unit

A freezer condenser on a cook line clogs with grease faster than any other unit in the kitchen, so front access for cleaning matters more here than anywhere else.

Automatic defrost

Clears ice buildup on a schedule, keeping airflow across the evaporator open so the cabinet cools evenly instead of only at the front.

Waste heat recovery condensate vaporizer

Evaporates the water from each defrost cycle using waste heat, useful on a line where there is no floor drain nearby.

What is an under counter freezer?
An under counter freezer is a commercial freezer built to counter height, typically 850mm, with a stainless steel worktop on top. It holds frozen product at -18C to -22C at the point of use so staff do not have to leave the line to reach the walk-in.
An upright freezer is a tall reach-in cabinet for bulk frozen storage, usually in a back area. An under counter freezer sits inside the working line at counter height, holding a service quantity right at the station, with a usable worktop above it.

What temperature range does the ANKE Under Counter Freezer hold?
It holds -18C to -22C and is rated to operate in 43C ambient heat, with a -35C evaporating temperature.
To hold -18C to -22C inside the cabinet, the refrigerant itself has to run far colder, at around -35C. That margin is what keeps the freezer at temperature when the ambient around it rises. A chiller only needs -10C at the evaporator to hold its warmer setpoint.
The ANKE Under Counter Freezer rejects 975 watts of heat, compared with 613 watts for the same size chiller. That is why front breathing and venting matter more on a freezer than on a chiller.
Annual consumption is 2347 kWh for UCF1, 2496 kWh for UCF2, and 2748 kWh for UCF3, all rated Energy Efficiency Class D. Freezing uses considerably more energy than chilling, so a freezer should only be specified where frozen holding is actually needed.

Why does ice build up inside an under counter freezer?
Ice comes from warm, moist air entering the cabinet, usually through frequent door opening at a busy station or a door seal that has stopped closing fully. The ANKE 700 Series uses automatic defrost to clear this before it blocks airflow across the evaporator.
On a cook line, airborne grease coats a condenser coil faster than dust alone would, so check and clean it every 1 to 3 months. On the ANKE 700 Series the condensing unit slides forward from the front, so this can be done without pulling the unit out of the counter run.
Check whether the front grill is blocked, then check the condenser coil for grease, then check what is sitting beside the unit. A freezer placed next to a fryer or griddle without adequate ventilation will run continuously and still struggle.
The 700 Series includes a waste heat recovery condensate vaporizer system, which evaporates the condensate using waste heat from the refrigeration system rather than draining it away.
